- 4 tbsp sunflower oil
- 4 tbsp fresh breadcrumbs
- 4 tbsp chopped fresh parsley, plus extra sprigs to garnish
- Finely grated rind of 1 large lemon
- 4 monkish fillets, about 5-6 oz/ 140-175g each
- Salt and Pepper
1. Preheat the oven to 350F / 180C. Mix together the oil, breadcrumbs, parsley, and lemon rid until well combined. Season to taste with salt and pepper.
2. Place the fish fillets in a large roasting pan.
