♥ Monkfish With A Lemon & Parsley Crust

Serves 4



Ingredients
  • 4 tbsp sunflower oil
  • 4 tbsp fresh breadcrumbs
  • 4 tbsp chopped fresh parsley, plus extra sprigs to garnish
  • Finely grated rind of 1 large lemon
  • 4 monkish fillets, about 5-6 oz/ 140-175g each
  • Salt and Pepper


1. Preheat the oven to 350F / 180C. Mix together the oil, breadcrumbs, parsley, and lemon rid until well combined. Season to taste with salt and pepper.
2. Place the fish fillets in a large roasting pan.


3. Divide the breadcrumb mixture among the fish and press it down with your fingers to ensure it covers the fillets.
4. Bake in the preheated oven for 7-8 minutes, or until the fish is cooked through.


5. Garnish with parsley sprigs and serve.
